More baking and oven woes...

I just made two loaves of banana bread using this recipe from Money Saving Mom. I tried some and it is yum, but they got a little too dark. This has happened before when I baked, and I'm not sure if the oven is at the right temperature, if I should adjust the racks, or if I should check on things earlier. Oh well, it still tastes good, but isn't as pretty, hence no pictures.

I made two loaves because I got a SWEET deal on bananas. Occasionally the grocery store gathers the single lonely bananas and packages them together for $1. I got about 14 in this last package!

Lack of blogging but lots of baking!

I know I have been absent from blogging lately, but with the end of the school year comes all sorts of new stress. Apparently, I have been trying to relieve my stress by stalking food blogs and trying new recipes. In fact, last week, we kind of maybe spent $180 (!!!!!!) on groceries. Oops.

So here are some things that I have been making lately:


First up was this delicious Strawberry Coffee Cake from Joy the Baker, and OMG it was completely amazing. I have been loving strawberries lately, and this was just wonderful with a scoop of vanilla ice cream.

Then I tried making granola bars from The Frugal Girl. I made both the chocolate chip and the raisin granola bars. We have been storing all the extras in the freezer and they are great for a quick breakfast.

Renegade Craft Fair


We headed out to the Renegade Craft Fair in Brooklyn today.  Thankfully for my wallet, I didn't buy nearly as much as I did at the Craftacular.

My first purchase was this awesome shadowbox from peppersprouts that I had debated purchasing at a prior craft fair.  I love it, and it goes really well with the city themed art work we have in our living room.


Then I got this cute necklace from Lusterbunny:

Throw in an ice cream cone and an Italian ice, and you've got a nice afternoon spent at McCarren Park.

I heart saving money!

My husband was able to transfer another $700 to savings for May from his extra income.  That brings us to $2200 total saved in May!  I'm so excited because it had seemed like a really spendy month for awhile there, but I guess I was just being too hard on myself. :)

May Recap

I really can't believe that it is June already, and that the school year is almost over and vacation is almost about to start.  I'm going to have to figure out ways to make some extra money this summer so I don't feel like a complete bum.

May was an interesting month in terms of the budget.  On the one hand, I kind of went a little overboard with shopping, but on the other hand, we were easily able to save $1500, which was the goal.  Some extra money came our way, and we should be able to save around $500 of that as well.

I'm getting a little nervous about job security.  I signed my contract for next year, so I am fine, but my husband's job could be in jeopardy.  We really need to tighten the budget (or actually try to follow it) for June, so that we can beef up our emergency fund even quicker.  Our rent is not cheap ($1500 a month - but $1450 starting in August) and we really need to be certain that we would be able to pay it in case something happened.  All of my stuff won't do me much good if we can't pay the rent.

We haven't worked out the budget for June yet, but I transferred $750 over to savings already.  This month I will be receiving an extra paycheck (my stipend for my clubs) and I want to put the whole check in savings.
